VeggiePlanet (map) is an all-vegetarian place, though a bit dive-y.  It doubles as a music club, so if you come during a performance you're relegated to a small area of benches near the kitchen.  However, the brunch is pretty good and has self-serve coffee with soy milk. (Read the HLRecordreview.)<br />BorderCafe (map) has a vegetarian menu.
